Effortless Collard Greens Bacon (Print Version)

# Ingredients:

01 - 4 slices of thick-cut bacon, diced into half-inch sections
02 - 1 small yellow onion, finely chopped
03 - 2 minced garlic cloves
04 - 1 tsp of kosher salt
05 - 1/2 tsp of freshly cracked black pepper
06 - 2 tbsp granulated sugar
07 - A few shakes of your favorite hot sauce
08 - 1/4 cup apple cider vinegar, with extra if needed for more flavor
09 - 2 pounds of collard greens, de-stemmed and chopped into strips about 3 inches wide (kale or chard work, too)
10 - 1 cup of chicken broth or plain water

# Instructions:

01 - Warm up a big pan over medium heat. Toss in the bacon and cook, stirring now and then, until the edges just start to turn golden. Add the onions and let them soften and lightly brown.
02 - Sprinkle in the garlic, salt, pepper, sugar, and hot sauce. Stir and cook for about a minute, just until you notice the garlic's aroma.
03 - Pour in the apple cider vinegar and bring the mix to a gentle simmer. Let it bubble away until the liquid reduces by half, making sure to scrape up the flavorful bits stuck to the pan.
04 - Toss in the collard greens along with the chicken broth (or water). Keep it simmering while turning the heat down to medium-low. Stir occasionally as the greens cook down and lose their vibrant color.
05 - Taste and adjust with more vinegar or hot sauce, if you want. Serve with a spoonful of the juices from the pan.
