Bean Mango Mix (Print Version)

# Ingredients:

→ Fresh Produce

01 - 2 tiny honey mangoes, cut into chunks
02 - 2 soft avocados, cut into cubes
03 - 1 red bell pepper, chopped into small pieces
04 - ½ red onion, minced
05 - ¼ cup cilantro leaves, snipped
06 - 3-4 juicy limes for squeezing

→ Pantry & Canned Goods

07 - 1 (15 oz) can black beans, washed and drained
08 - 1 cup corn bits (roughly 2 big ears of corn)
09 - ½ teaspoon chili powder
10 - Salt and fresh ground black pepper as needed

# Instructions:

01 - Grab a big bowl and throw in the washed black beans, chopped honey mangoes, corn bits, diced red pepper, minced red onion, and snipped cilantro. Squeeze lime juice all over, sprinkle the chili powder, and add salt and pepper as you like. Mix everything up until it's all blended.
02 - Put a cover on the bowl and stick it in the fridge for half an hour to an hour so all the tastes can mix together.
03 - Right before you're gonna eat it, add fresh avocado chunks on top of each serving. You can put extra lime pieces on the side if anyone wants more zing.

# Notes:

01 - Honey mangoes are your best bet for this dish because they're super sweet and have a smooth texture
02 - To cook fresh corn: Get a big pot of water bubbling, drop in the shucked corn, and let it cook for about 2 minutes. Let it cool completely before cutting the kernels off
03 - You can add more or less of any ingredient based on what you like
