Beef Cheese Rice Bowl (Print Version)

# Ingredients:

01 - 1 small onion, diced finely
02 - 2 garlic cloves, crushed
03 - 1 pound ground beef (lean)
04 - 3 tablespoons taco mix (single packet)
05 - 1 cup white long grain rice, uncooked
06 - 2 cups chicken broth, low-sodium
07 - 8 ounces sauce from tomatoes
08 - 1 cup cheddar cheese, grated

→ Fresh Toppings

09 - Lettuce, shredded thin
10 - Tomatoes, cut into cubes
11 - Cream that's sour
12 - Cilantro leaves, fresh
13 - Jalapeños cut into rings
14 - Avocados, cubed small
15 - Tortilla chips, broken up

# Instructions:

01 - Grab a big skillet and cook the beef until it browns, breaking it into tiny bits as you go
02 - Toss in your diced onions and stir until they're soft and your beef isn't pink anymore. Get rid of extra fat from the pan. Then throw in your crushed garlic and let it cook about a minute till it smells good
03 - Dump your taco mix over the meat and give it a good stir so it's mixed in everywhere
04 - Put in rice, sauce from tomatoes, and your broth. Mix everything up, wait till it bubbles, then pop a lid on and turn down the heat to medium-low. Let it simmer roughly 20 minutes, stirring now and then, until your rice feels soft
05 - Mix in your grated cheese till it's all melty. Dish it up hot and top with whatever fresh stuff you like

01 - You'll get better flavor if you make your own taco mix at home
02 - Want something lighter? Switch the beef for ground turkey
03 - Got extras? They'll stay good in a sealed container up to 4 days in your fridge or 3 months frozen
04 - To warm it back up, cover it in a baking dish and stick it in a 375°F oven for 15 minutes
