British Bubble Squeak (Print Version)

# Ingredients:

01 - 1 cup cooked vegetables you have lying around (like cabbage, Brussels sprouts, carrots, or peas), roughly chopped
02 - 2 cups mashed potatoes leftover from another meal
03 - 1/2 cup onion, minced finely

04 - 2 tablespoons olive oil
05 - 2 tablespoons butter
06 - Freshly cracked black pepper and salt, adjusted to your liking

# Instructions:

01 - Grab a large bowl and dump in the mashed potatoes, vegetable chunks, and finely chopped onion. Stir it all together until well combined.
02 - Put a big frying pan on medium heat. Toss in the butter and olive oil and let them melt together until it starts bubbling softly.
03 - Scoop the potato mix into the pan and press it down so it's an even layer. Let it cook quietly for 10-15 minutes or until the bottom crisps up to a nice golden color.
04 - Carefully turn the mixture over (don’t stress if it splits a bit!), then cook for 5-10 more minutes until you see crispy, golden edges on both sides.
05 - Sprinkle generously with salt and pepper, then serve straight off the stove so it’s hot and still crispy on the edges!
