Grab a large bowl and dump in the mashed potatoes, vegetable chunks, and finely chopped onion. Stir it all together until well combined.

Put a big frying pan on medium heat. Toss in the butter and olive oil and let them melt together until it starts bubbling softly.

Scoop the potato mix into the pan and press it down so it's an even layer. Let it cook quietly for 10-15 minutes or until the bottom crisps up to a nice golden color.

Carefully turn the mixture over (don’t stress if it splits a bit!), then cook for 5-10 more minutes until you see crispy, golden edges on both sides.

Sprinkle generously with salt and pepper, then serve straight off the stove so it’s hot and still crispy on the edges!
