Chicken Cottage Cheese Mix (Print Version)

# Ingredients:

→ Protein & Dairy

01 - Cooked chicken breast, 1.25 lb, torn or diced
02 - Cottage cheese, 1 cup

→ Fresh Produce

03 - Fresh dill, 2 tablespoons, chopped fine
04 - Scallions, 3 tablespoons, cut into thin rings
05 - Celery, 1 rib, chopped into tiny cubes

→ Dressing & Seasonings

06 - Lemon juice, 2 tablespoons
07 - Dijon mustard, 1 tablespoon
08 - Maple syrup, 1/2 teaspoon
09 - Salt, 1/8 teaspoon, with extra for adjusting
10 - Black pepper, 1/4 teaspoon, with extra for adjusting
11 - Garlic powder, 1/2 teaspoon

# Instructions:

01 - Grab your blender or stick blender and whip that cottage cheese till it's nice and smooth. Quick tip: if you've got a stick blender, just blend right in the container! Don't feel like blending? That's cool too - some folks enjoy the chunky texture.
02 - Grab a decent-sized bowl and throw in your smooth cottage cheese, chopped dill, sliced scallions, diced celery, fresh lemon juice, dijon, a touch of maple syrup, and all your seasonings. Stir it all together.
03 - Toss your chicken into the bowl with everything else and mix it up good. Take a little taste and add more salt or pepper if you need to.
