Chorizo Pizza Sandwich (Print Version)

# Ingredients:

→ Dough

01 - A cup of flour, all-purpose
02 - Quarter a whole batch of pizza dough
03 - About half a cup of cornmeal
04 - Use olive oil as required

→ Choripan

05 - Mozzarella slices, 9 to 10
06 - 3-4 chorizo links
07 - Tomato slices (you can skip these)
08 - Jalapeño slices (optional)
09 - Use mayonnaise if you'd like

→ Chimichurri

10 - A handful (¾ cup) of chopped parsley
11 - Quarter cup of red wine vinegar
12 - 4 to 6 garlic cloves, minced up
13 - A tablespoon of red chili flakes
14 - Enough olive oil to get it to the thickness you like
15 - Salt until it tastes right

# Instructions:

01 - Crank your pizza oven up to between 450°F and 500°F.
02 - Put the parsley, wine vinegar, garlic, chili flakes, olive oil, and some salt together in a bowl. Stir it well, then let it sit until you need it.
03 - Pop a cast iron pan into the oven to get it hot. Toss in the sausages and cook them for around 10-12 minutes until they're done. Set them aside and keep 'em warm.
04 - Divide the dough into four equal pieces. Sprinkle flour on your counter and stretch each bit into a circle about 8 inches wide.
05 - Brush some oil generously on each dough piece and lay down mozzarella slices.
06 - Fold each piece over slightly so it looks like a crescent. Brush it with some more olive oil and bake in the pizza oven for 10 minutes or until the dough is cooked and the cheese is gooey.
07 - Cut up the cooked sausages into pieces and tuck them into the cheesy dough buns.
08 - Pile on chimichurri, jalapeños, tomatoes, and a bit of mayo if you like. Dig in while it’s hot!
