Throw all sauce ingredients into your blender and pulse until everything's smooth and combined.

Sprinkle salt and pepper generously across both sides of the cod. Pour most of your sauce over the fish, but save about 2 tablespoons for later. Let it soak anywhere from 30 minutes to an hour.

Heat the olive oil in a big pan and cook the fish about 3 minutes on each side until it's golden brown.

Pour your leftover sauce on top and sprinkle with parsley if you want.
