Crunchy Air Fried Cauliflower (Print Version)

# Ingredients:

→ For the Blue Cheese Dip

01 - 1/4 cup Greek yogurt, plain
02 - 1/4 cup mayo
03 - 1/4 cup blue cheese, crumbled
04 - Small pinch of black pepper, freshly ground
05 - Splash of hot sauce, whatever you like

→ For the Crispy Cauliflower

06 - 1 head cauliflower, fresh
07 - 1 teaspoon salt, kosher
08 - 1/2 teaspoon chili powder
09 - 1/2 teaspoon garlic powder
10 - 2 eggs, large
11 - 1/4 cup water
12 - 1 cup breadcrumbs, plain
13 - Cooking spray for coating the air fryer

# Instructions:

01 - Combine Greek yogurt, mayo, blue cheese crumbles, black pepper, and your favorite hot sauce in a small bowl. Stir until everything's mixed well. Stick it in the fridge while you cook the cauliflower so the flavors can blend together.
02 - Chop your cauliflower into small, bite-sized chunks no bigger than 1 1/2 inches across. Smaller pieces cook more evenly and they're easier to dip later on.
03 - Put your cauliflower chunks in a bowl with salt, chili powder and garlic powder. In another bowl, whisk eggs with water. Pour this egg mixture over your spiced cauliflower and mix well. Then sprinkle breadcrumbs over everything and toss until each piece is fully covered.
04 - Spray your air fryer with cooking spray. Arrange cauliflower in a single layer - don't stack them. Air fry at 350°F for 7 minutes, then flip the pieces and cook another 7 minutes until golden and crunchy. You'll need to work in batches.
05 - They taste best when they're hot and crispy right from the air fryer! Put them on a plate with your cold blue cheese dip on the side for dunking.

# Notes:

01 - You can make these in a regular oven too - lay them flat on a baking sheet at 350°F for 20-30 minutes, turning once halfway
02 - Cook them in small batches so they don't touch each other - this keeps them crunchier
03 - Eat them right away for the best crunch and flavor
