Crunchy Pepper Cucumber Mix (Print Version)

# Ingredients:

→ Raw Veggies

01 - 4 baby cucumbers, cut into thin circular slices
02 - 10 small colorful peppers, chopped into rings

→ Flavor Sprinkles

03 - ½ Tablespoon Bagel Topping Mix, adds amazing crunch
04 - 1 teaspoon Spicy chili oil, use more or less based on how hot you want it

→ Ginger Sesame Mix

05 - ¼ cup high-quality olive oil, the fresher the better
06 - ¼ cup plain rice vinegar
07 - 1 ½ Tablespoons soy sauce or tamari
08 - 1 ½ Tablespoons pure maple syrup, for gentle sweetness
09 - 2 teaspoons toasted sesame oil, gives a wonderful nutty taste
10 - 1 big garlic clove
11 - 1-inch piece ginger root
12 - A tiny bit of black pepper, freshly ground

# Instructions:

01 - Throw all the dressing stuff in your blender and whizz until it's nice and smooth. Put this tasty mix aside while you work on the veggies.
02 - Grab a bowl and add your sliced cucumbers with pepper rings. Pour roughly ¼ cup of your fresh dressing over them, then scatter the bagel mix and chili oil on top. Mix everything around until it's all coated. Try a bite and add whatever you think it needs!
