Set your oven to 400°F (or 200°C, Gas Mark 6) and get a baking tray lined with parchment.

Pull the puff pastry out of the fridge, then leave it on the counter for a few minutes. This keeps it from cracking when unrolled.

Slice the pastry into squares. Fold them corner-to-corner to form triangles, and lay them on your prepared tray. Leave space between each.

In a small container, whisk the egg and water together, then use a brush to coat the tops of the triangles.

Slide the tray into the hot oven. Bake for roughly 20 minutes or until the pastries are golden and puffed up.

While they’re baking, beat the cream with sugar until stiff peaks form. Spoon the whipped cream into a piping bag with a nozzle tip, then wait to use.

Remove the green bits from your strawberries, then slice them thinly.

Thanks to cooling, the pastries should now be easy to slice open. Pipe the whipped cream into the middle, add strawberry slices, and gently press closed.
