Easy Toast Bake (Print Version)

# Ingredients:

→ Base Ingredients

01 - 5 big eggs
02 - 1 teaspoon ground cinnamon
03 - 2 teaspoons of vanilla
04 - 1 loaf of challah bread (around 1 to 2 days old, weighs about 1½ pounds), cut into cubes roughly 1-inch wide
05 - 1½ cups of regular milk
06 - 2 tablespoons packed brown sugar
07 - ¼ teaspoon ground nutmeg
08 - ¼ teaspoon fine sea salt
09 - Pan grease: either unsalted butter or coconut oil

→ Crunchy Topping

10 - ½ cup pecans, chopped into small pieces
11 - 2 tablespoons melted coconut oil or unsalted butter
12 - 2 tablespoons packed brown sugar

→ For Serving

13 - Real maple syrup

# Instructions:

01 - Coat a 9x13-inch dish lightly with butter or oil to prevent sticking. Spread cut bread into the dish, arranging evenly.
02 - Stir the eggs, milk, vanilla, sugar, cinnamon, nutmeg, and salt in a big bowl until it's all blended smoothly. Pour everything carefully over the bread cubes.
03 - Leave the dish at room temperature for 30 minutes so the bread can soak up the liquid. For an even better soak, chill it overnight in the fridge (covered).
04 - Set your oven to 350°F and let it fully heat up before baking.
05 - Put the melted butter on top of the soaked bread. Sprinkle the pecans and sugar over that. Cover with foil, bake for 35 minutes. Then uncover and bake another 10-20 minutes until set and golden.
06 - Take the dish out and let it sit for 10 minutes with foil draped loosely over. Serve warm with some maple syrup if you'd like.
