01 -
Put the lentils in a fine sieve and rinse them under cold water from the tap.
02 -
After rinsing, move the lentils to a blender. Add the broth (or salted water), and let everything sit for 3-4 hours.
03 -
Blend the soaked ingredients for about 2 minutes. Keep going until the mixture feels smooth and free of lumps.
04 -
Drizzle some oil into a non-stick pan or skillet. Let it heat up, then lower the temperature to medium-low.
05 -
Pour a bit of batter into the pan, enough to create a thin layer. Spread it around with a spoon if needed. Cook for 3-4 minutes until the sides lift easily. Flip and cook the other side for 1-2 more minutes.
06 -
For each wrap, repeat this process. If the batter thickens too much, give it a quick blend again. Add extra water or broth if you need it to get back to a thin pancake-like consistency.
07 -
Place the cooked wraps on a plate, and cover them with a damp towel to keep them soft. Pair with your favorite fillings or toppings.
