Easy Lentil Wraps Vegan (Print Version)

# Ingredients:

01 - 1 ½ cups (360 ml) vegetable broth or water with ½ tsp salt
02 - ¾ cup (150 g) dry red lentils

# Instructions:

01 - Put the lentils in a fine sieve and rinse them under cold water from the tap.
02 - After rinsing, move the lentils to a blender. Add the broth (or salted water), and let everything sit for 3-4 hours.
03 - Blend the soaked ingredients for about 2 minutes. Keep going until the mixture feels smooth and free of lumps.
04 - Drizzle some oil into a non-stick pan or skillet. Let it heat up, then lower the temperature to medium-low.
05 - Pour a bit of batter into the pan, enough to create a thin layer. Spread it around with a spoon if needed. Cook for 3-4 minutes until the sides lift easily. Flip and cook the other side for 1-2 more minutes.
06 - For each wrap, repeat this process. If the batter thickens too much, give it a quick blend again. Add extra water or broth if you need it to get back to a thin pancake-like consistency.
07 - Place the cooked wraps on a plate, and cover them with a damp towel to keep them soft. Pair with your favorite fillings or toppings.

# Notes:

01 - Sweet versions work better with water and just a tiny pinch of salt instead of broth.
02 - For savory wraps, try mixing in spices like garlic powder, smoked paprika, onion powder, or whatever you enjoy.
03 - Switching to brown lentils works too, but cut the amount to ½ cup (100 g) and let them soak for at least 10 hours.
04 - You can make either 10 smaller wraps or 5 larger ones with this.
05 - Soaking time isn’t counted in the total prep time.
