Egg Avocado Breakfast (Print Version)

# Ingredients:

01 - 2 eggs at room temperature
02 - 2 pieces whole wheat bread
03 - 1/3 soft avocado
04 - 2 tablespoons grated Parmesan
05 - Salt and pepper as needed
06 - Any fresh herbs (basil, thyme, or parsley)
07 - Cut heirloom tomatoes

# Instructions:

01 - Fill a pot with enough water to submerge eggs completely. Heat until bubbling. Lay two mason jar rings flat on the bottom
02 - Switch off the heat, break eggs inside rings. Put the lid on and let them sit for 5 minutes (4 for super runny, 4:30 for soft-set, over 5 for firmer centers)
03 - While eggs sit, brown your bread and spread mashed avocado across each piece
04 - Lift eggs with a flat spatula, remove rings, put on avocado toast. Sprinkle Parmesan, salt, pepper, and herbs. Add tomatoes on the side
