# Ingredients:

→ For the Spread

01 - 2 tablespoons creamy garlic herb cheese spread (such as Boursin), softened to room temp
02 - 1 tablespoon crushed walnuts or pecans
03 - 2 teaspoons chopped oil-packed sun-dried tomatoes

→ For the Sandwich

04 - 2 thick slices country-style or sourdough bread
05 - 2 teaspoons softened butter
06 - 10 small spinach leaves
07 - 8-10 halved, pitted kalamata olives
08 - 1/3 cup grated mozzarella or 2-3 slices fresh mozzarella

# Instructions:

01 - Combine the softened garlic herb cheese with your crushed nuts and chopped sun-dried tomatoes until everything's blended into a smooth mixture.
02 - Put butter on one side of each bread slice and cook them butter-side-down in a pan until they turn golden brown. Remove from heat.
03 - Apply your garlic mixture to the unbuttered sides of both bread pieces. Stack spinach, olives, and cheese on one slice, then place the second slice on top.
04 - Heat your sandwich on medium-low for roughly 3-4 minutes each side. The cheese should melt completely while the outside gets crispy and golden.
