Fluffy Cottage Cheese Eggs (Print Version)

# Ingredients:

→ Main Components

01 - 8 big eggs
02 - 1 cup low-fat cottage cheese (go for 0-2% fat)
03 - ½ cup grated cheese

→ Flavor Enhancers

04 - ¼ teaspoon salt
05 - ¼ teaspoon ground black pepper
06 - ¼ teaspoon garlic powder
07 - ¼ teaspoon onion powder

→ Extra Add-ins (pick any combo up to 1 cup)

08 - Fresh spinach, chopped up
09 - Bell peppers, cut into small cubes
10 - Small broccoli pieces
11 - Sausage, already cooked
12 - Ham, diced small

# Instructions:

01 - Warm your oven to 350°F and coat a silicone muffin pan with cooking spray or a bit of oil so the egg bites won't stick.
02 - Throw the eggs, cottage cheese, and all spices into a strong blender. Run it until everything looks smooth and uniform.
03 - Add roughly ¼ cup of your egg mix into each muffin spot.
04 - Sprinkle grated cheese and whatever add-ins you picked on top of each cup. Lightly stir with a spoon to mix them in. Feel free to add more cheese on top if you want.
05 - Pop them in the oven for 18-22 minutes until they're firm and don't wobble anymore. Let them cool a bit before taking them out.

# Notes:

01 - Want an egg-white only version? Swap out whole eggs for 1.5 cups of just whites (about 12 egg whites). Just know they might turn out a bit wetter and less airy than using whole eggs.
