Greek Potatoes With Feta (Print Version)

# Ingredients:

01 - 1 teaspoon salt
02 - 1 kg of potatoes, peeled and sliced into bite-sized chunks
03 - 1/4 lemon, juiced
04 - 1 red bell pepper, diced
05 - 3 tablespoons of olive oil

→ DIY spice mix

06 - 1 teaspoon oregano
07 - 1 teaspoon of sweet paprika
08 - 1 teaspoon onion powder
09 - 1 teaspoon garlic powder
10 - 1/2 teaspoon of black pepper
11 - 1/4 teaspoon of cinnamon

→ For garnish

12 - 2 tablespoons of fresh parsley, finely chopped
13 - A squeeze of lemon (about 1/4 lemon)
14 - 60 grams of feta cheese (Greek or smooth type)

# Instructions:

01 - Set your oven to 200°C (400°F) so it's ready to go.
02 - In a big bowl, toss together the cubes of potatoes and peppers with 1/4 lemon's juice, salt, and 2 tablespoons of oil.
03 - Use the last tablespoon of olive oil to grease your baking tray. Lay out the vegetables in a single even layer.
04 - Slide it all into the oven and roast in the center for about 25 minutes.
05 - Pull the tray out briefly, sprinkle the spice blend over everything, and stir to coat every piece well.
06 - Return the seasoned vegetables back to the oven for 10-15 more minutes until they're perfectly crisp on the edges and soft inside.
07 - Squeeze on some lemon, scatter the feta pieces over the top, and finish with parsley.
