Take boiled potatoes and mash them until there are no lumps left behind. The smoother they are, the better the texture of your sticks will turn out.

Add the mashed potatoes, salt, a pinch of pepper, fresh coriander, rice flour, and cornflour. Mix until it's all blended well and looks uniform.

Either pipe the potato mix into stick shapes on parchment paper using a piping bag, or roll them gently by hand. If it's a bit too soft, you can sprinkle a touch more flour, but be careful not to overdo it!

Stick them in the freezer for 30 minutes until they feel firm. Heat oil in a deep frying pan and fry them on high heat until they’re golden. Avoid low-temperature frying, or they’ll soak up too much oil and won’t crisp up.

Once fried, drain the sticks on a wire rack (skip paper towels to keep them crispy). Serve right away with a dip or sauce you like!
