Crispy Potato Sticks (Print Version)

# Ingredients:

→ Needed Items

01 - 2 tablespoons of finely minced fresh coriander
02 - 3 medium boiled potatoes (roughly 290g)
03 - A dash of salt, as per liking
04 - A pinch of freshly crushed black pepper

→ For Outer Layer

05 - 1 tablespoon rice flour
06 - 1 tablespoon cornflour

# Instructions:

01 - Take boiled potatoes and mash them until there are no lumps left behind. The smoother they are, the better the texture of your sticks will turn out.
02 - Add the mashed potatoes, salt, a pinch of pepper, fresh coriander, rice flour, and cornflour. Mix until it's all blended well and looks uniform.
03 - Either pipe the potato mix into stick shapes on parchment paper using a piping bag, or roll them gently by hand. If it's a bit too soft, you can sprinkle a touch more flour, but be careful not to overdo it!
04 - Stick them in the freezer for 30 minutes until they feel firm. Heat oil in a deep frying pan and fry them on high heat until they’re golden. Avoid low-temperature frying, or they’ll soak up too much oil and won’t crisp up.
05 - Once fried, drain the sticks on a wire rack (skip paper towels to keep them crispy). Serve right away with a dip or sauce you like!

# Notes:

01 - Wrap the sticks tightly in plastic wrap while freezing to keep them fresh.
02 - To ensure crispiness, fry them briefly in hot oil over medium heat. Don’t fry them at low heat as they’ll soak up too much oil.
03 - Use a wire rack to drain them post-frying. Paper towels can make them lose their crunch.
