Fluffy Homemade Pancake Mix (Print Version)

# Ingredients:

→ For the Mix

01 - 4 cups plain flour (520g)
02 - 1/4 cup white sugar (50g)
03 - 4 teaspoons baking powder
04 - 2 teaspoons baking soda
05 - 1 teaspoon sea salt

→ To Make Pancakes

06 - 2 cups ready pancake mix (260g)
07 - 1 1/2 cups milk
08 - 1 large egg
09 - Dash of vanilla extract (optional)
10 - Butter to grease the pan

→ For Serving

11 - Butter, maple syrup, and seasonal berries as preferred

# Instructions:

01 - Combine the flour, sugar, baking powder, baking soda, and salt in a large bowl and mix thoroughly. Transfer to a big jar or container to store.
02 - When pancake time arrives, get your griddle hot at 325°F or put a skillet on medium-high heat.
03 - Take 2 cups of your pancake mix and put it in a big bowl with the milk, egg, and vanilla if you want. Stir until most lumps disappear but don't mix too much. Add a bit more milk if it's too thick.
04 - Add butter to your heated griddle and pour 1/4 cup batter for each pancake. Cook about 2 minutes until bubbles form on top, then flip and cook one more minute until golden.

# Notes:

01 - Your dry mix will stay good for 6 months when kept in a sealed container at room temp, or for a year when frozen
02 - In a rush? Just use 1 1/2 cups water instead of milk and egg
03 - Leftover pancakes freeze nicely for up to 3 months - warm them in your microwave or toaster
