Ginger Carrot Immune Soup (Print Version)

# Ingredients:

01 - 1 tablespoon extra virgin olive oil
02 - 2 1/2 cups diced carrots
03 - 1/2 cup finely diced white onion
04 - 1 garlic clove, crushed
05 - 1 teaspoon freshly grated ginger
06 - 1 tablespoon freshly squeezed orange juice
07 - 1/4 teaspoon turmeric powder
08 - 1 1/2 cups veggie stock
09 - 1/4 teaspoon salt (adjust to your liking)
10 - 1/4 teaspoon black pepper, freshly ground

# Instructions:

01 - Warm the olive oil in a medium saucepan on medium heat. Toss in onion and carrots, cooking until they're soft, roughly 8-10 minutes, and stir frequently. Mix in the garlic and take off the heat.
02 - Transfer your cooled veggies to a blender with the ginger, orange juice, turmeric, veggie stock, salt and black pepper, then blend until it's silky smooth.
03 - Pour into bowls while hot and top with a little splash of olive oil and some fresh ground pepper for extra flavor.

# Notes:

01 - Always let your hot veggies cool down a bit before blending or your blender might spray hot soup everywhere
02 - This soup works wonders for boosting your immune system when you feel a cold coming on
