Thai Red Curry Noodles (Print Version)

01 - 4 ounces rice noodles
02 - 3 tablespoons red curry paste
03 - 1 (13.5-ounce) can coconut milk
04 - 1 tablespoon fish sauce
05 - 2 teaspoons brown sugar
06 - 3 cloves garlic, minced
07 - 1 onion, diced
08 - 1 red bell pepper, diced
09 - 6 cups low sodium chicken broth
10 - Kosher salt and freshly ground black pepper, as needed
11 - 1 ½ pounds boneless, skinless chicken breasts, cut into small chunks
12 - 1 tablespoon freshly grated ginger
13 - 1 tablespoon olive oil

14 - ¼ cup chopped fresh basil leaves
15 - 3 green onions, sliced thin
16 - 2 tablespoons freshly squeezed lime juice
17 - ½ cup chopped cilantro

# Instructions:

01 - In a Dutch oven, warm up the oil on medium heat. Sprinkle your chicken pieces with salt and pepper lightly. Brown the chicken for around 2-3 minutes, then scoop them out and put them aside.
02 - Toss in the garlic, onion, and bell pepper. Stir them around every so often until they soften up and everything smells awesome, which should take 3-4 minutes.
03 - Add in the curry paste and ginger. Stir it all together for about a minute while the fragrant spices do their magic.
04 - Pour in the chicken broth and coconut milk. Scrape the bottom of the pan as you stir to get all those tasty bits mixed into the liquid.
05 - Bring back the cooked chicken. Let everything come to a gentle boil, then lower the heat and simmer for 10 minutes. Stir it every now and then.
06 - Drop in the rice noodles, fish sauce, and sugar. Stir occasionally while letting it simmer until the noodles are tender and ready to eat, around 5 minutes.
07 - Remove the pot from the heat. Stir in the cilantro, basil, green onions, and lime juice. Taste it and add more seasoning if you think it needs it.
08 - Spoon the soup into bowls while it’s still warm. The steam will have you ready to dig in!
