Spicy Chicken Noodle Bowl (Print Version)

# Ingredients:

→ For the Chicken

01 - 1 pound chicken breast, chopped into bite-sized cubes
02 - 12 ounces of noodles you love (try brown rice udon or plain rice noodles!)
03 - 2 tablespoons low sodium tamari or regular soy sauce
04 - 1 tablespoon honey to add just enough sweetness
05 - 1 tablespoon chili paste to spice things up
06 - 1 tablespoon toasted sesame oil
07 - ½ cup chopped green onion (white sections)
08 - 1 tablespoon finely chopped fresh garlic

→ For that Killer Sauce

09 - ½ cup low sodium tamari or regular soy sauce
10 - 1 tablespoon smooth peanut butter
11 - 2 tablespoons rice vinegar
12 - 2 tablespoons chili paste (sambal oelek)
13 - 1-2 tablespoons brown sugar (more or less depending how sweet you want it)
14 - ¼ teaspoon ground ginger
15 - 1½ tablespoons toasted sesame oil
16 - ½ teaspoon red pepper flakes
17 - 3 tablespoons water mixed with 1 tablespoon cornstarch

→ For the Topping

18 - ⅓ cup smashed peanuts for extra crunch
19 - ⅓ cup chopped green onion (green sections)

# Instructions:

01 - Slice chicken into small cubes and put them in a bowl. Combine with soy sauce/tamari, honey and chili paste. Let it soak up the flavors for at least 30 minutes but if you can wait 1-2 hours that's even better!
02 - Bring salted water to a boil in a large pot. Cook noodles according to what the package says. When they're done, drain and put them aside.
03 - Combine all sauce stuff in a bowl except the water and cornstarch mixture. We'll add that later to make it thicker.
04 - Warm up the sesame oil in a pan over medium-low heat. Throw in the white parts of your green onions and let them cook for 2-3 minutes. Add garlic and cook one more minute until it smells great.
05 - Put your soaked chicken in the pan (don't worry about leftover marinade). Cook for 2-3 minutes on each side until it reaches 165°F inside.
06 - Add your sauce to a pot with low heat. Stir in the cornstarch water mix. Wait for it to get thicker, then toss in noodles and mix well. Add chicken and let everything warm together for a minute or two.
07 - Top with crushed peanuts and green onions. Want extra color? Throw on some steamed broccoli or peppers too!

# Notes:

01 - You can use any noodles you've got handy - even plain spaghetti works just fine!
02 - Always go for low sodium soy sauce/tamari - if you only have regular kind, just use half as much
03 - Feel free to toss in whatever veggies you like - this meal works with pretty much anything
