Sweet Chili Pineapple Sauce (Print Version)

# Ingredients:

→ Sauce Base

01 - 1½ cups granulated sugar
02 - 1 cup extracted pineapple juice
03 - ½ cup rice vinegar or apple cider vinegar
04 - 1 tablespoon finely chopped garlic

→ Seasonings & Thickener

05 - 1-2 tablespoons crushed red pepper flakes (from 2 tiny Bird's eye chilies)
06 - 1 tablespoon tomato sauce (optional)
07 - 1 teaspoon salt, adjust to your liking
08 - 2 tablespoons cornstarch mixed with 4 tablespoons cold water

# Instructions:

01 - Toss sugar, pineapple juice, vinegar, and salt into a big sturdy pot. Heat until it starts to simmer gently.
02 - Mix in your chili flakes, chopped garlic, and tomato sauce. Let everything bubble on medium heat for around 5 minutes.
03 - Turn down the heat. Slowly pour in your cornstarch-water mix while stirring constantly to avoid clumps forming.
04 - Keep it on low heat, giving it a stir now and then until it's as thick as you want. Don't worry if it seems thin, it'll get thicker as it cools down.
05 - Wait for it to cool down completely, then pour into a clean bottle and store in the fridge.
