Spinach Feta Spanakopita Cookies (Print Version)

# Ingredients:

→ Liquid Components

01 - 1 egg, slightly beaten
02 - 4 tbsp high-quality olive oil (swap with melted butter if you like)
03 - 1/4 cup smooth Greek yogurt

→ Greens & Seasonings

04 - 1½ cups baby spinach, chopped small
05 - 1 tbsp chopped fresh dill
06 - 1 tbsp green onions, finely cut
07 - Salt and fresh ground pepper, as needed

→ Dairy & Dry Goods

08 - 4 oz feta cheese, broken into chunks
09 - 1/3 cup mozzarella, freshly grated
10 - 1 cup self-rising flour

# Instructions:

01 - First, warm your oven to 350°F. Put some parchment on a baking tray so nothing sticks.
02 - In a big bowl, mix your beaten egg with the olive oil and yogurt until they're smooth and blended together.
03 - Add your chopped spinach, fresh dill, green onions, salt, pepper, crumbled feta, and shredded mozzarella. Stir everything up well.
04 - Add the flour and stir it all together. Don't stress if it seems too dry at first - just keep mixing. You can use your hands to work it if that's easier.
05 - Roll the mixture into little balls, flatten them a bit, and bake until they turn golden, around 17-20 minutes.

# Notes:

01 - No self-rising flour? Make your own by mixing 1 cup all-purpose flour with 1 tsp baking powder, 1/4 tsp baking soda and 1/2 tsp salt
