Tangy Hot Chicken Wings (Print Version)

# Ingredients:

→ For the Sauce

01 - ¼ cup tomato ketchup
02 - 3 tablespoons real maple syrup
03 - 1 tablespoon dark molasses
04 - 1 tablespoon apple cider vinegar
05 - 2 teaspoons chopped chipotle peppers from canned chipotles in adobo
06 - 2 teaspoons Worcestershire sauce
07 - ½ teaspoon dry mustard powder
08 - ½ teaspoon onion powder
09 - ¼ teaspoon garlic powder

→ For the Spice Rub

10 - 1 teaspoon Hungarian sweet paprika
11 - 1 ½ teaspoons packed dark brown sugar
12 - ½ teaspoon garlic powder
13 - ½ teaspoon onion powder
14 - ⅛ teaspoon chipotle powder
15 - ⅛ teaspoon kosher salt
16 - ⅛ teaspoon freshly ground black pepper

→ For the Wings

17 - 1 lb chicken wings (roughly 10 mixed pieces)
18 - 2 teaspoons olive oil

# Instructions:

01 - Get your oven ready by putting a wire rack in a baking sheet or roasting pan. Put this pan on the middle rack and heat the oven to 350°F with the pan inside.
02 - Combine all the dry spices for the rub in a small bowl. Put it aside for now.
03 - Wash and dry the chicken wings with paper towels, then put them in a medium bowl. Pour 2 teaspoons olive oil over them and toss until coated. Sprinkle with 1 tablespoon (or more if you want) of the spice mix and toss again. Let them sit for 15 minutes so the flavors can sink in.
04 - Arrange the wings skin side up on the hot pan or rack. Cook for 20 minutes. Turn them over and cook another 20 minutes.
05 - While the wings are cooking, make your sauce. Mix all sauce ingredients in a small pot. Bring it to a boil on medium heat, then turn down to low and let it bubble gently for 15 minutes so the flavors blend together. Set it aside when done.
06 - Flip the wings one more time and broil for 3 to 5 minutes until they're brown but not burnt. Toss them with a few tablespoons of sauce until they're coated how you like.
07 - Let the wings cool down for a few minutes so you don't burn your mouth. Serve them with extra sauce on the side for dipping.

# Notes:

01 - Try using smoked paprika instead of Hungarian sweet for a richer smoky flavor
02 - You can keep any leftover wings in a sealed container in your fridge for up to 4 days
