Greek Chicken Bowls (Print Version)

# Ingredients:

→ Chicken Marinade

01 - 1/4 cup regular Greek yogurt (any fat content works)
02 - 2 tablespoons freshly squeezed lemon juice
03 - 2 garlic cloves, finely grated
04 - 2 tablespoons finely chopped flat leaf parsley
05 - 1 tablespoon extra virgin olive oil
06 - 1 1/2 teaspoons oregano, dried
07 - 1/2 teaspoon paprika with smoky flavor
08 - 1/2 teaspoon cumin powder
09 - 1/2 teaspoon ground coriander seeds
10 - Black pepper and salt as needed
11 - 1 1/4 pounds chicken breasts without skin or bones, diced into small chunks

→ Tzatziki Sauce

12 - 1 cup cucumber, either shredded or cut into small cubes
13 - 1 1/2 cups Greek yogurt (whatever fat level you prefer)
14 - 2 tablespoons lemon juice, freshly squeezed
15 - 1 tablespoon fresh dill, chopped up
16 - 1/2 teaspoon garlic, grated finely
17 - Black pepper and salt as you like

→ Bowl Assembly

18 - 1 cup cherry tomatoes cut into quarters
19 - 1 cup cucumber chopped into small squares
20 - 1/4 cup red onion cut into tiny pieces
21 - 1/3 cup olives of the kalamata variety
22 - 1/2 cup feta cheese broken into crumbles
23 - 2 cups brown rice, already cooked

# Instructions:

01 - Combine all the marinade stuff in a mixing bowl until everything's mixed well. Toss in the chicken chunks and let them soak up the flavors for half an hour.
02 - While your chicken sits, whip up the tzatziki by throwing all sauce ingredients together. Give it a taste and add more salt if needed, then pop it in the fridge until you're ready to eat.
03 - Pour just enough olive oil to cover the bottom of a big skillet and warm it over medium-high heat. Drop in the chicken pieces in one layer and let them brown for about 3-4 minutes. Turn them over and cook another 4-5 minutes until they're done inside.
04 - Start with rice in each bowl, then pile on your cooked chicken, cucumber chunks, red onion bits, tomatoes, kalamata olives, and some crumbled feta. Finish with a big spoonful of your cold tzatziki on top.
