Citrus Orange Loaf (Print Version)

# Ingredients:

01 - 1.5 cups regular flour
02 - 2 teaspoons baking powder
03 - ½ teaspoon salt
04 - 1 cup thick full-fat Greek yogurt
05 - 1 cup white sugar
06 - 3 big eggs
07 - 1 tablespoon orange zest from fresh fruit
08 - 1/4 cup orange juice squeezed by hand
09 - 1 teaspoon vanilla extract
10 - 1/2 cup olive oil (or basic cooking oil)
11 - Icing sugar for the top

# Instructions:

01 - Crank your oven to 350°F. Grab your 8.5 x 4.5 inch loaf tin and smear it with grease then dust with flour so nothing sticks.
02 - Throw your flour, baking powder, and salt in a bowl and stir them up with a whisk until they're all mixed together.
03 - In a bigger bowl, stir together the yogurt, sugar, eggs, orange zest, juice, and vanilla until it looks smooth. Slowly pour in your oil while you keep whisking to blend it all up.
04 - Add the dry mix to your wet stuff and fold gently. Don't go crazy mixing or you'll mess up the texture. Just blend until everything's combined.
05 - Pour your mix into the tin and stick it in the oven for 50-55 minutes. You'll know it's done when it turns golden on top and a toothpick stuck in the middle comes out clean.
06 - Leave your cake in the tin for about 20 minutes, then move it to a wire rack until it's totally cool. If you want to make it pretty, sprinkle some icing sugar on top.
