Spritz some cooking spray on a big, nonstick skillet and warm it up low-to-medium heat.

Crack open the eggs, whisk them, and sprinkle a bit of salt and pepper. Spread the eggs out across the pan. Quickly set a slice of bread on top, press lightly, then flip. Do the same thing with the second slice.

When the eggs are just about set (roughly a minute), carefully flip over the bread and egg as one piece using a spatula.

Top one bread slice with your cheese and the meat. Fold any extra egg edges up onto the bread.

Stack the piece without toppings on the filled one. Keep cooking until the bread gets golden, and the cheese is gooey and melted.
