First, grab some paper towels and pat your tilapia fillets completely dry - this helps you get that nice golden crust. Sprinkle both sides with garlic powder, sea salt, and black pepper. Leave them aside while your skillet warms up.

Pour the olive oil into a large skillet and let it warm up over medium-high heat for about 2 minutes until it's good and hot.

Drop your fish into the hot oil, making sure they aren't touching each other. You might need to cook them in batches. Let them sit without moving for 3-4 minutes until you notice the sides turning white. Flip them over carefully and cook another 2-4 minutes till they're done. They should reach 135-140°F inside.
