Cozy Cabbage Soup (Print Version)

# Ingredients:

01 - 2 tbsp good quality olive oil
02 - 2 chopped carrots
03 - 1 regular yellow onion, cut into cubes
04 - 1 celery stalk, cubed
05 - 4 cloves of garlic, grated finely
06 - 2 Yukon Gold potatoes, cubed
07 - 1 small green cabbage, roughly 1 pound (9 cups when chopped)

→ Cupboard necessities

08 - ¾ tsp sea salt
09 - Black pepper, freshly ground
10 - 2 tbsp white wine vinegar
11 - 2 cans (14.5-ounce) fire-roasted tomato chunks
12 - 4 cups veggie broth
13 - 1 can (15.5-ounce) white beans, drained and washed
14 - 1 tsp dried thyme
15 - Parsley leaves, for topping

# Instructions:

01 - Pour the olive oil into a big pot over medium heat. Toss in the carrots, onion, celery, salt, and a few twists of pepper. Let them cook for 8 minutes, giving them a stir now and then.
02 - Splash in the vinegar and mix it around. Next, dump in the tomatoes, broth, beans, garlic, potatoes, cabbage, and thyme. Put the lid on and let everything bubble away for 20 to 30 minutes until the potatoes and cabbage get soft.
03 - Add more salt or pepper if needed, sprinkle with fresh parsley, and dish it up.
