Avocado Chicken Melt (Print Version)

# Ingredients:

→ Main Components

01 - 4 slices of your favorite bread (try ciabatta or sourdough)
02 - 1 creamy avocado, sliced up
03 - 2 chicken breasts, no bone or skin
04 - 4 cheese slices (cheddar, provolone, or Swiss work great)

→ Seasonings & Spreads

05 - Freshly cracked black pepper and salt to taste
06 - 1 tablespoon of mustard (Dijon is ideal)
07 - 2 big spoonfuls of mayonnaise

→ Fresh Toppings

08 - A small ripe tomato, sliced thin
09 - 1 small red onion, sliced into rings

→ For Cooking

10 - Butter or olive oil for toasting the bread
11 - 1 tablespoon of olive oil to cook the chicken

# Instructions:

01 - Pat your chicken with some salt and pepper all over. Add olive oil to a pan and warm it on medium-high until it starts to shimmer. Lay the chicken in the pan and cook about 6-7 minutes per side until the center is no longer pink, and the outside is golden brown. Rest it for a moment and then slice it thin.
02 - As the chicken sits, cut up the creamy avocado, tomato, and onion into slices. Set your cheese slices on standby!
03 - Take your bread slices and coat them generously with mayo and a little mustard. This'll help the bread toast up with amazing flavor.
04 - Start layering—add the sliced chicken, avocado, and a slice of cheese to each slice of prepared bread. Top it with tomato and onion before adding the second slice of bread, mayo-side facing out.
05 - Heat your skillet or griddle over medium heat and add a bit of olive oil or butter. Place the sandwiches in the skillet and toast until the outside is golden and the cheese is gooey and melted, about 3-4 minutes each side. Press lightly with a spatula to help it cook evenly.

# Notes:

01 - For even melting, pull your cheese out of the fridge ahead of time so it's not too cold.
02 - Leftovers should go in a sealed container and warmed up in a toaster oven to keep the bread crispy. Skip the microwave!
