Effortless Scallion Sesame Crackers (Print Version)

# Ingredients:

→ Dry Ingredients

01 - 1/4 cup sesame seeds, toasted
02 - 1/2 teaspoon salt
03 - 1/8 teaspoon baking soda
04 - 1 1/3 cup plain flour
05 - 1/2 teaspoon dry yeast

→ Fresh Ingredients

06 - 1 cup scallions, chopped into tiny pieces

→ Wet Ingredients

07 - 2 tablespoons butter, melted
08 - 1/2 cup milk that's at room temp

# Instructions:

01 - Mix your flour, sesame seeds, salt, baking soda, yeast, and scallions in a big bowl. Pour in the melted butter and room-temperature milk, stirring everything together until it turns into dough. Knead it briefly—just for a minute or two—until it's smooth, then set it aside for 15 minutes to rest.
02 - Crank your oven up to 375°F (190°C). Split the dough into two pieces. Lay out a big sheet of parchment paper and lightly grease your rolling pin so the dough won't stick.
03 - Roll out the dough on the parchment to about quarter-thickness (2 millimeters). The thinner it is, the crispier the crackers will turn out. Use a small glass or cutter to shape the crackers into rounds or any shape you prefer.
04 - Place the cracker shapes on a baking tray, spaced slightly apart. Use a fork to poke tiny holes in each one so they don't puff up in the oven.
05 - Put the crackers in the oven and bake for around 12–15 minutes, or until they're lightly golden. Let them cool completely on a wire rack before you pack or eat them.
