Hot Honey Feta Chicken (Print Version)

# Ingredients:

→ Spicy Honey Glaze

01 - 3/4 teaspoon red chili flakes
02 - 1/3 cup of runny honey
03 - 1 1/2 teaspoons of your favorite hot sauce (like Cholula or Frank's)

→ Chicken Prep & Spice Layer

04 - 9 oz pieces of chicken breasts, sliced in half lengthwise
05 - 2 teaspoons of smoky paprika
06 - 1 teaspoon fine salt
07 - 1/2 teaspoon flavorful garlic powder
08 - 1/2 teaspoon dried oregano
09 - 1 teaspoon of black pepper (ground)
10 - 1/2 teaspoon zesty onion powder
11 - 1/4 teaspoon spicy cayenne
12 - 1/4 cup plain flour (for dredging)
13 - 2 eggs whisked till smooth
14 - 1 cup crispy panko crumbs

→ Cooking and Toppings

15 - Crumbled feta cheese, about 7 oz
16 - Vegetable oil (6-8 tablespoons, for frying)

# Instructions:

01 - Stir together chili flakes, hot sauce, and honey in a small bowl. Warm it in the microwave for 20 seconds. Once mixed and cooled, you can tweak the spice to taste by adding more chili or sauce.
02 - Carefully cut chicken breasts in half to give you four flat pieces. Combine paprika, salt, black pepper, garlic, onion, oregano, and cayenne in a small dish for the spice mix.
03 - Prepare three plates or shallow bowls. Mix flour with half of your seasoning in the first. Use the second bowl for whisked eggs. In the last, combine panko with the rest of your seasoning. Coat each piece of chicken in flour, then egg, and finally panko.
04 - Pour enough oil to lightly coat the base of a frying pan and heat it over medium-high. Test with a breadcrumb—it should sizzle when it's ready. Fry chicken in batches, about 3-4 minutes on each side, until crunchy and golden. Add more oil as needed.
05 - Layer the crumbled feta over the fried chicken. Broil until the cheese gets browned and crispy on top but still creamy inside.
06 - Pour your spicy honey glaze over the cheesy chicken while it’s hot and serve up. Any extra honey can go in the fridge.

01 - The honey glaze can be made in advance and stored in the fridge for later use.
02 - Feel free to pick any hot sauce you like—Frank's and Cholula are just suggestions!
