Easy Granola Yogurt Cups (Print Version)

# Ingredients:

→ Granola Base

01 - Pinch of salt (optional but worth it)
02 - ½ tsp ground cinnamon (optional, but adds flavor)
03 - ⅓ cup pure maple syrup
04 - ½ cup creamy peanut butter
05 - ½ tsp vanilla extract (totally optional)
06 - 1 ½ cups old-fashioned rolled oats

→ Toppings

07 - Fresh fruit slices
08 - Favorite yogurt
09 - A sprinkle of chia seeds

# Instructions:

01 - Set your oven to 350°F (175°C) to warm up. Coat 6 muffin cups lightly with a bit of coconut oil or use cooking spray to keep things from sticking.
02 - Throw the oats, peanut butter, maple syrup, cinnamon, salt, and, if you're using it, vanilla into a medium-sized bowl. Stir until everything gets nicely coated and combined.
03 - Split the granola evenly into the greased muffin cups. Use your fingers or the back of a spoon to shape the mixture, pressing it down to form a little cup with some space in the middle for the filling.
04 - Bake the granola cups for around 12-15 minutes, until the edges begin to look golden. Keep an eye on them so they don't burn.
05 - Take the muffin pan out and leave the cups there to cool for about 5 minutes. Once they feel a little set, gently loosen each cup using a knife and carefully remove them. Place on a rack to cool fully.
06 - When the granola cups are completely cooled, add a scoop of yogurt in each. Top them off with fresh fruit, chia seeds, or anything else you like, like nuts, honey, or extra granola.

# Notes:

01 - You can make these ahead of time and keep them in an airtight container for up to 5 days.
02 - Freeze unfilled cups for as long as 3 months. Let them thaw at room temperature, then fill them up.
03 - Want a toastier vibe? Toss the oats in the oven for 5-7 minutes before mixing everything together.
04 - Switch flavors up! Use whichever nut butter, sweetener, or yogurt works for your needs.
